Homemade Spaghetti Sauce

Ingredients:
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 carrot, grated
– 1 celery stalk, finely chopped
– 2 pounds ripe tomatoes, diced (or 1 can (28 ounces) crushed tomatoes)
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1/2 teaspoon dried thyme
– 1/2 teaspoon dried rosemary
– Salt and pepper to taste
– 1 tablespoon tomato paste (optional, for extra richness)
– 1 tablespoon balsamic vinegar (optional, for added depth of flavor)
– 1 tablespoon sugar (optional, to balance acidity)
