Homemade Spaghetti Sauce


Directions:
1. In a large saucepan, heat olive oil over medium heat. Add the onion, garlic, carrot, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
2. Add the diced tomatoes (or crushed tomatoes) to the saucepan, along with the dried oregano, basil, thyme, and rosemary. Season with salt and pepper to taste.
3. If using tomato paste, balsamic vinegar, or sugar, add them to the saucepan at this point.
4. Bring the sauce to a simmer, then reduce the heat to low. Let the sauce cook uncovered for 30-45 minutes, stirring occasionally, until it has thickened to your desired consistency.
5. Taste and adjust seasoning as needed. If the sauce is too acidic, you can add a bit more sugar to balance the flavors.
6. Once the sauce is ready, remove it from the heat and let it cool slightly before serving. Use it to top your favorite pasta or store it in an airtight container in the refrigerator for up to one week.
