Galaxy Cake Roll



4 oz cream cheese, softened (½ package)
1 cup powdered sugar
2 cups Cool Whip
For the Chocolate Ganache:

½ cup heavy whipping cream
1 cup semi-sweet chocolate chips
Black gel food coloring
Directions:

Prepare the Cake:

Preheat oven to 350°F (177°C). Line a 15×10 inch jelly roll pan with parchment paper and spray with non-stick spray.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the eggs for 3 minutes until pale yellow. Gradually add the sugar, oil, buttermilk, vinegar, and vanilla extract, mixing well after each addition.
Fold in the flour mixture until just combined.
Divide the batter into separate bowls and color each portion with different gel food colorings (black, purple, teal, blue).
Drizzle the colored batters into the prepared pan in a swirling pattern to create a galaxy effect.
Bake for 12-13 minutes until the cake springs back when touched.
Roll the Cake:
8. Immediately roll the warm cake in a clean kitchen towel dusted with powdered sugar. Let it cool completely on a wire rack.
