Black Forest Cake


1️⃣ Prepare the Pans:
– Preheat your oven to 350°F (180°C). Line two 8-inch round baking pans with parchment paper and spray with nonstick cooking spray. Set aside.

2️⃣ Make the Cake:
– In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
– In a liquid measuring cup, mix the buttermilk, vanilla extract, and instant coffee granules (if using) until the coffee is dissolved.
– In another large bowl, combine the vegetable oil and granulated sugar. Add the eggs one at a time, beating well after each addition.
– Alternately add the dry ingredients and the buttermilk mixture to the oil and sugar mixture, starting and ending with the dry ingredients. Mix until just combined.
– Pour the batter evenly into the prepared pans and bake for 28-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.

3️⃣ Prepare the Cherry Filling:
– In a medium pot, mix the granulated sugar and cornstarch. Add the cherries and cook over medium heat until the mixture thickens and the cherries are soft, about 5-7 minutes.
– Remove from heat and stir in the butter and almond extract. Let cool to room temperature.
