Octopus Salad

Ingredients:
• 1 medium-sized octopus (about 2-3 pounds), cleaned
• 1/4 cup olive oil, plus extra for drizzling
• Juice of 2 lemons, plus lemon wedges for serving
• 3 cloves garlic, minced
• 1 red onion, thinly sliced
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1/2 cup fresh parsley, roughly chopped
• Salt and freshly ground pepper to taste
• Crushed red pepper flakes (optional)
