Octopus Salad


1. Cook the Octopus: Put the octopus in a big pot and cover it with water. Bring it to a boil, then let it simmer until it’s tender, which should take about 45-60 minutes. Once cooked, let it cool in the liquid, then drain it and cut it into pieces.
2. Make the Dressing: In a bowl, whisk together the olive oil, lemon juice, and minced garlic. Season it with salt, pepper, and red pepper flakes if you’re into some heat.
3. Combine the Salad: In a large mixing bowl, toss together the sliced octopus, red onion, cherry tomatoes, cucumber, and parsley. Drizzle the dressing over it and gently mix everything so it’s nicely coated.
4. Marinate: Pop the salad in the fridge for at least 1 hour to let all the flavors mingle and develop.
5. Serve: When you’re ready to enjoy, serve the salad chilled with extra lemon wedges on the side. Give it a final drizzle of olive oil for that extra touch. Enjoy your ocean-inspired creation!
