Ingredients:

For the crust:

– 1 1/2 cups graham cracker crumbs
– 1/4 cup granulated sugar
– 6 tablespoons (3/4 stick) unsalted butter, melted

For the cheesecake:

– 16 ounces (1 package) cream cheese, softened
– 1/2 cup granulated sugar
– 4 large eggs, separated
– 1 teaspoon vanilla extract
– 1 cup butterscotch sauce (homemade or store-bought)

For the butterscotch sauce:
– 1 cup heavy cream
