Butterscotch Cheesecake


– 1/2 cup brown sugar
– 2 tablespoons unsalted butter
– 1 teaspoon vanilla extract

Instructions:

1. Preheat oven to 350°F.
2. Prepare the crust: Mix crumbs, sugar, and melted butter in a bowl until well combined. Press into a 9-inch springform pan. Bake for 10 minutes, then set aside.
3. Prepare the cheesecake: Beat cream cheese until smooth. Add granulated sugar and beat until combined. Beat in eggs, one at a time, followed by vanilla extract.
4. Pour in the butterscotch sauce and mix until well combined.
5. Pour the cheesecake batter into the prepared pan over the crust.
6. Bake for 50-60 minutes or until the edges are set and the center is slightly jiggly.
7. Let cool completely on a wire rack.
8. Prepare the butterscotch sauce: In a saucepan, combine heavy cream, brown sugar, butter, and vanilla extract. Bring to a simmer over medium heat, then reduce heat and let cook for 5 minutes or until thickened slightly.
9. Drizzle the butterscotch sauce over the cooled cheesecake. Add gramcracker crumble around edges if desired!
10. Refrigerate for at least 4 hours or overnight before serving.
