Vegetable Beef Soup


In a large pot, heat olive oil over medium heat. Add beef and cook until browned on all sides.
Add onions and garlic and sauté until onions are translucent.
Add carrots, celery, green beans, corn, potatoes, diced tomatoes, beef broth, thyme, and parsley.
Bring to a boil, then reduce heat and simmer for 1 hour or until vegetables are tender and meat is cooked through.
Season with salt and pepper. Serve hot.
