Sweet and Tangy Meatballs with Pineapple


1. In a large bowl, mix together all the ingredients for the meatballs. Shape the mixture into small golf ball-sized meatballs.

2. To cook the meatballs, you can either air fry or bake them. If air frying, place the meatballs in the basket of your air fryer and cook at 380°F for 10 minutes, shaking them halfway through. If baking, place the meatballs on a baking sheet lined with parchment paper and bake at 400°F for 20-25 minutes until cooked through.

3. In a medium bowl, whisk together all the ingredients for the sweet and sour sauce. Set aside.

4. In a large wok or pan, heat the vegetable oil over medium-high heat. Add the diced onion and bell peppers, cooking for 1 minute. Add the minced garlic and cook for another 30 seconds until fragrant.

5. Pour the sweet and sour sauce mixture into the wok and stir until the sauce thickens and becomes glossy.

6. Add the cooked meatballs and pineapple chunks to the wok, tossing everything together well. Cook for another 2 minutes to heat through.

7. Serve the sweet and tangy meatballs over rice, and enjoy the burst of flavor!
