Stuffed Pepper Casserole



1. Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat, breaking it apart as it cooks.

2. Add Vegetables: Once the beef is mostly cooked, add the chopped onions and bell peppers. Cook for 5-10 minutes, until they start to soften.

3. Add Garlic: Stir in the minced garlic and cook for another minute or two, until fragrant.

4. Combine Ingredients: Add the Worcestershire sauce, beef broth, diced tomatoes, uncooked rice, Italian seasoning, salt, and black pepper to the skillet. Stir well to combine.

5. Simmer: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 20 minutes, stirring halfway through, until the rice is tender.

6. Incorporate Cheese: Once the rice is cooked, stir in half of the shredded Mozzarella and cheddar cheese until melted and well incorporated.

7. Top with Cheese: Sprinkle the remaining cheese over the top of the casserole. Cover the skillet with a lid to melt the cheese. Alternatively, if your skillet is oven-safe, you can place it under the broiler to melt the cheese faster.

8. Serve: Once the cheese is melted, remove from heat and serve hot.
