Strawberry Swirl Cake Roll


Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.
2. In a large mixing bowl, beat the eggs, sugar, and vanilla until pale and fluffy (about 5 minutes).
3. Sift the flour, baking powder, and salt together and fold gradually into the egg mixture.
4. Spread the batter evenly in the prepared pan and bake for 10-12 minutes until golden.
5. Dust a clean kitchen towel with powdered sugar, invert the cake onto the towel, peel off the paper, and roll the cake with the towel. Cool on a wire rack.
6. For the filling, whip the cream, powdered sugar, and vanilla to stiff peaks.
7. Unroll the cake, spread the cream, sprinkle diced strawberries, and re-roll. Chill before serving.
