Strawberry Pancake Sushi Recipe


In a mixing bowl, combine the pancake mix, milk, egg, and vegetable oil. Stir until smooth and well combined.
Heat a non-stick skillet or griddle over medium heat. Lightly grease the skillet with additional vegetable oil or cooking spray.
Pour a small amount of pancake batter onto the skillet to form a thin circle, about 4-5 inches in diameter.
Cook the pancake for 1-2 minutes on each side, or until golden brown and cooked through. Repeat with the remaining batter, stacking the cooked pancakes on a plate as you go.
Once all the pancakes are cooked, let them cool slightly.
Lay one pancake flat on a clean work surface. Place several slices of fresh strawberries in a line along one edge of the pancake.
Carefully roll the pancake up tightly, like a sushi roll, enclosing the strawberries inside.
Use a sharp knife to slice the rolled pancake into bite-sized pieces, about 1 inch thick.
Repeat the process with the remaining pancakes and strawberries.
Serve the Strawberry Pancake Sushi pieces on a plate, drizzled with maple syrup or honey if desired.
Optionally, garnish with a dusting of powdered sugar before serving.
