Strawberry Lemon Bliss Cheesecake


Directions:
Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 8 minutes.
Reduce oven temperature to 325°F (163°C). Beat cream cheese, sugar, lemon zest, lemon juice, and vanilla extract until smooth. Add eggs one at a time, beating just until blended. Gently fold in strawberry slices.
Pour mixture over crust and bake for 35-40 minutes, or until center is almost set. Cool completely on a wire rack.
For the glaze, heat lemon curd with water in a saucepan over low heat until pourable. Spoon over cooled cheesecake.
Chill cheesecake for at least 4 hours. Before serving, decorate with whipped cream, fresh strawberry halves, and sprinkle with lemon zest.
