Strawberry Heaven Pudding


1. Prepare the Strawberry Mixture:
– In a medium saucepan, combine 1/2 cup of sugar, cornstarch, strawberry Jell-O, lemon juice, and water.
– Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens.
– Set aside to cool slightly, then stir in the sliced strawberries.

2. Prepare the Cake Layer:
– Tear the angel food cake into 1-inch pieces.
– In a large bowl, toss the cake pieces with 2 cups of Cool Whip until evenly coated.
– Press the cake mixture into a 9×13-inch pan (preferably glass to showcase the layers).

3. Prepare the Cream Cheese Layer:
– In a mixer bowl, combine the cream cheese, remaining 1/2 cup of sugar, and vanilla extract.
– Beat until smooth, then fold in the remaining Cool Whip.
– Spread the cream cheese mixture evenly over the cake layer.

4. Assemble the Dessert:
– Pour the cooled strawberry mixture over the cream cheese layer, spreading it out to cover the cake evenly.
– Refrigerate for 2 to 3 hours before serving.

– You can substitute a 16-ounce bag of frozen whole strawberries (thawed and chopped) for the fresh strawberries.
