Savory Lentil Patties

To begin, give the red lentils a good rinsing and simmer them until they are soft but not mushy, following the directions on the box. After cooking, remove any surplus water and allow them to cool for a little.
Vegetables Sautéd: A little olive oil heated in a pan over medium heat can do the trick. Toss in the grated carrot, minced garlic, and chopped shallot and sauté for 5-7 minutes, or until the carrot is softened and aromatic. Let the ingredients cool.
In a large basin, mix together the cooked lentils, sautéed vegetables, chopped parsley, tomato puree, salt, and black pepper. Mash to blend. For a little texture, softly mash the ingredients using a fork or potato masher. Now is the time to add the eggs and/or breadcrumbs for binding and mix everything together well.
Roll Out: Flatten the ingredients into patty shapes. You may adjust the consistency by adding more breadcrumbs if the mixture is very moist.
In a pan over medium heat, heat a thin coating of olive oil to cook the patties. To get a golden brown and crispy exterior, cook the patties for about three to four minutes each side.
Savor these flavorful lentil patties when they’re still hot, topped with your favorite veggies or served as a burger patty. They’re tasty either alone or topped with a little yogurt or tahini sauce.
