Roasted Asparagus & Carrots!!!


Instructions:
Preheat your oven to 400°F (200°C).
Wash and trim the asparagus spears, then peel and slice the carrots into even pieces.
Place the asparagus and carrots on a baking sheet lined with parchment paper.
Drizzle olive oil over the vegetables, then sprinkle with sea salt, black pepper, and freshly squeezed lemon juice.
Toss the vegetables to coat evenly with the oil and seasonings.
Spread the vegetables out in a single layer on the baking sheet.
Roast in the preheated oven for about 20-25 minutes or until the vegetables are tender and lightly browned, tossing halfway through cooking for even roasting.
Once roasted to your liking, remove from the oven and serve hot as a delicious and nutritious side dish!
