Pineapple Coconut Snowballs


1. In a mixing bowl, combine the drained crushed pineapple and softened cream cheese.
2. Gradually add the powdered sugar to the mixture, stirring until well combined and smooth.
3. Chill the mixture in the refrigerator for about 30 minutes to firm up slightly.
4. Once chilled, scoop out small portions of the mixture and roll them into bite-sized balls.
5. Roll each ball in shredded coconut until evenly coated.
6. Place the coconut-coated snowballs on a baking sheet lined with parchment paper.
7. Chill the snowballs in the refrigerator for at least 1 hour before serving to allow them to set.
8. Serve chilled and enjoy the tropical flavor!
