Pickled Red Onions


1. In a small pot, crank up the heat and toss in the vinegar, water, peppercorns, salt, and bay leaf. Let it all mingle until it starts to boil, then turn off the heat.
2. Grab a medium-sized bowl and toss in those thinly sliced onions.
3. Now, carefully pour that hot liquid over the onions in the bowl.
4. Let everything hang out together for at least 30 minutes, so those flavors can cozy up.
5. Once they’re done marinating, transfer your pickled onions into a nice, sealed container. Pop it into the fridge, and they’ll be good to go for about two weeks.
6. Serve those tangy, flavorful pickled red onions with just about anything! Enjoy!
