Parmesan Crusted Chicken


Preheat the oven to 350 degrees Fahrenheit.
Prepare the coating: In a shallow dish, mix together the bread crumbs, Parmesan cheese, parsley, salt, and pepper. In another shallow dish, combine the melted butter, lemon juice, and minced garlic.
Coat the chicken: Dip each chicken breast first in the butter mixture, ensuring it’s well coated. Then, press it into the bread crumb mixture, making sure crumbs adhere to both sides.
Bake: Place the coated chicken breasts in a 9×13 baking dish. If you have large chicken breasts, you may need additional dishes. Bake for 40 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit when checked with a meat thermometer.
Notes:
If the butter and lemon juice mixture begins to solidify, warm it in the microwave for 20 seconds.
Use grated Parmesan cheese for better adherence to the chicken. Shredded cheese may not stick as well.
For a gluten-free version, simply use gluten-free bread crumbs instead of panko.
