Oven Fried Chicken


Preheat the oven to 400°F (200°C). Place a wire rack on a baking sheet and brush with melted butter or oil.
In a shallow dish, combine flour, breadcrumbs, baking powder, paprika, garlic powder, onion powder, salt, and pepper.
In another dish, whisk together eggs and buttermilk.
Pat chicken dry with paper towels. Dip each piece first in the flour mixture, then in the buttermilk mixture, and again in the flour mixture.
Arrange the chicken on the prepared wire rack. Bake for 35-45 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
Let the chicken rest for 5 minutes before serving.
