New York Cheesecake Cookies


Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together all-purpose flour, baking soda, and salt. Set aside.
In a large mixing bowl, beat softened unsalted butter, softened cream cheese, and granulated sugar until light and fluffy.
Add the egg and vanilla extract, and beat until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Place graham cracker crumbs in a shallow dish.
Scoop tablespoon-sized portions of cookie dough and roll into balls. Roll each ball in the graham cracker crumbs until coated.
Place the coated cookie dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
Using the bottom of a glass or the palm of your hand, flatten each cookie slightly.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Once cooled, dust the tops of the cookies with powdered sugar if desired.
