Mozzarella Stick Onion Rings


Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.
Peel and slice the onion into thick rings, then carefully separate the rings.
Cut the mozzarella string cheese sticks into halves lengthwise to create smaller sticks.
Place a mozzarella stick inside each onion ring, ensuring they fit snugly.
In three separate shallow dishes, prepare your breading station: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs mixed with Italian seasoning, garlic powder, paprika, salt, and pepper.
Dip each mozzarella-stuffed onion ring into the flour, shaking off any excess.
Then dip it into the beaten eggs, allowing any excess to drip off.
Finally, coat it evenly with the seasoned breadcrumbs, pressing gently to adhere.
Place the coated onion rings on the prepared baking sheet in a single layer.
Lightly spray the tops of the onion rings with cooking spray.
Bake in the preheated oven for 12-15 minutes, or until the onion rings are golden brown and the cheese is melted.
Let them cool for a few minutes before serving.
