Mini Baked Parmesan Potato Rounds


1. Preheat the oven to 400°F and spray 2 baking sheets with non-stick spray.
2. Wash the potatoes and slice them thinly, then place them in a large mixing bowl.
3. Add the vegetable oil to the bowl and stir to coat the potato slices evenly.
4. In a gallon-size plastic bag, combine the grated Parmesan cheese, garlic salt, and pepper. Seal the bag and shake well to mix the ingredients.
5. Add the sliced potatoes to the bag of cheese mixture and shake until the potatoes are thoroughly coated.
6. Arrange the coated potato slices in a single layer on the prepared baking sheets.
7. Place the baking sheets in the preheated oven and bake for about 40 minutes, turning the potato slices once halfway through the baking time.
8. Once the potato rounds are browned and fork-tender, remove them from the oven and serve immediately with your favorite dipping sauce, such as ranch dressing.
