Loaded Potato and Meatloaf Casserole


Directions:

Prepare Meatloaf Mixture: Preheat oven to 375°F (190°C). In a bowl, combine ground beef, onion, garlic, bread crumbs, milk, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
Form Meatloaf: Press the meatloaf mixture into the bottom of a greased baking dish.
Cook Potatoes: Boil potatoes until tender, about 20 minutes; drain. Mash with milk and butter, season with salt and pepper.
Layer the Casserole: Spread mashed potatoes over the meatloaf. Sprinkle with shredded cheddar cheese.
Bake: Bake in preheated oven for 40-45 minutes until the meatloaf is cooked through and potatoes are golden.
Serve: Top with sour cream and garnish with chives before serving.
