Lemon Meringue Pie Bars Recipe


Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

In a medium bowl, combine the flour, powdered sugar, and softened butter for the crust. Mix until crumbly. Press the mixture evenly into the bottom of the prepared baking dish. Bake for 15-20 minutes, or until lightly golden brown.

While the crust is baking, prepare the filling. In a separate bowl, whisk together the eggs, granulated sugar, flour, lemon juice, and lemon zest until smooth.

Once the crust is baked, pour the lemon filling over the hot crust. Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden.

While the bars are baking, prepare the meringue topping. In a clean mixing bowl, beat the egg whites and cream of tartar on high speed until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, beating until stiff peaks form and the sugar is dissolved.

Once the lemon bars are done baking, remove them from the oven and immediately spread the meringue over the hot filling, making sure to seal the edges.

Return the baking dish to the oven and bake for an additional 10-12 minutes, or until the meringue is lightly golden brown.

Allow the lemon meringue pie bars to cool completely in the baking dish on a wire rack. Once cooled, refrigerate for at least 1-2 hours before slicing.

Before serving, dust the top of the bars with powdered sugar. Slice into squares and enjoy the tangy sweetness of these Lemon Meringue Pie Bars!
