Jam Sponge Pudding

Here’s a step-by-step guide to making jam sponge pudding:

1. Preheat your oven to 180°C (350°F). Grease a baking dish or pudding basin with butter or cooking spray.

2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.

3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. In a separate bowl, sift the flour and baking powder together. Gradually add the flour mixture to the butter and sugar mixture, alternating with the milk. Mix until well combined and you have a smooth batter.

5. Spread a layer of jam evenly on the bottom of the greased baking dish or pudding basin.
