Italian Ravioli with Spinach, Artichokes, Capers, and Sun-Dried Tomatoes



Cook the Ravioli:
1. Cook the ravioli according to the package instructions until al dente. Drain and set aside.

Prepare the Vegetables:
2. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
3. Add the chopped sun-dried tomatoes, chopped artichokes, minced garlic, capers, and Italian seasoning. Cook for about 2 minutes, stirring occasionally.

Add the Spinach:
4. Add the fresh spinach to the skillet and continue cooking, stirring until the spinach wilts.

Combine Ravioli and Vegetables:
5. Reduce the heat to medium-low.
6. Add the cooked ravioli to the skillet along with 1 tablespoon of olive oil. Stir to combine everything well.
7. Taste and adjust the seasoning as needed. The dish should be salty enough from the capers, but you can add more salt or capers if desired.

Serve:
8. When serving, top the dish with shredded Parmesan cheese.
