Homemade Eggnog


1. In a large mixing bowl, whisk together the eggs, sugar, and sea salt until well combined. Set aside.
2. In a large saucepan, combine the whole milk, heavy whipping cream, cinnamon, and nutmeg. Heat over medium-low heat, whisking often, until the mixture begins to steam, about 10 to 15 minutes.
3. Gradually add ¼ cup of the warm milk mixture to the egg mixture, whisking constantly. Repeat this process twice more until you’ve added a total of 1 cup of the milk mixture to the egg mixture.
4. Pour the egg mixture back into the saucepan with the remaining milk mixture. Continue to heat and whisk almost constantly until the mixture thickens and reaches 160°F, about 15 minutes.
5. Remove the saucepan from heat and whisk in the vanilla extract. Strain the mixture into a jar or other container with a cover. Allow it to chill completely in the refrigerator.
6. Stir well before serving and top with a sprinkle of cinnamon if desired.
