Golden Oreo Strawberry Cheesecake Bars!


Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
Mix crushed Golden Oreo cookies with melted butter and press firmly into the bottom of the prepared pan to form the crust.
In a small saucepan, combine strawberries, 1 tablespoon sugar, and cornstarch. Cook over medium heat until strawberries are soft and the sauce has thickened. Set aside to cool.
In a mixing bowl, beat cream cheese, sour cream, 1/3 cup sugar, and vanilla until smooth. Add the egg and beat just until blended.
Pour the cream cheese mixture over the Oreo crust. Spoon the strawberry sauce randomly over the cream cheese layer. Use a knife to gently swirl the sauce into the cream cheese mixture.
Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Cool completely in the pan on a wire rack before refrigerating for at least 3 hours.
Lift out of the pan using the parchment overhang and cut into bars.
