Garlic Shrimp and Fries


Directions:
1. Preheat your oven to 425°F (220°C) for the fries. Line a baking sheet with parchment paper.
2. Toss the cut potatoes with 1 tablespoon of olive oil, cornstarch, salt, and pepper. Spread evenly on the baking sheet and bake for 25-30 minutes, until golden and crispy, flipping halfway through.
3. While the fries are baking, heat the remaining olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
4. Add the shrimp to the skillet, sprinkle with paprika, salt, and pepper. Cook for 2-3 minutes on each side until pink and cooked through.
5. Remove from heat and sprinkle fresh parsley over the shrimp.
6. Serve the garlic shrimp with the crispy fries and lemon wedges on the side.
