French Onion Chicken


Preheat your oven to 375°F (190°C). Grease a baking dish large enough to fit the chicken breasts in a single layer.
Season chicken breasts with salt and pepper on both sides.
In a large skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.
Add minced garlic, dried thyme, and dried rosemary to the skillet with the caramelized onions. Cook for an additional 1-2 minutes until fragrant.
Transfer the caramelized onion mixture to the prepared baking dish and spread it out evenly.
Place the seasoned chicken breasts on top of the caramelized onions in the baking dish.
Pour beef broth over the chicken breasts.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through, with an internal temperature of 165°F (75°C).
Remove the foil and sprinkle shredded Swiss cheese and shredded Gruyere cheese over the chicken breasts.
Return the baking dish to the oven and broil for an additional 2-3 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let the chicken rest for a few minutes before serving.
Garnish with chopped fresh parsley, if desired, before serving.

Tips:
For extra flavor, you can add a splash of white wine or balsamic vinegar to the caramelized onion mixture.
If you don’t have Swiss and Gruyere cheese, you can use mozzarella or provolone cheese instead.
Serve the French Onion Chicken with mashed potatoes or crusty bread to soak up the delicious sauce.
