Easy Chocolate Meltaway Cookies


Ingredients:
– 1 1/4 cups (185g) all-purpose flour, sifted and leveled
– 1/2 cup Dutch-process cocoa powder (or regular unsweetened cocoa powder)
– 1 tsp instant coffee powder
– 200g (1 cup) unsalted butter, softened at room temperature
– 3/4 cup powdered sugar

Instructions:
1. In a medium mixing bowl, sift together the flour and cocoa powder. Whisk in the instant coffee powder and set aside.
2. Using a stand mixer with the paddle attachment or a large mixing bowl with an electric hand beater, cream the softened butter on low speed until creamy, about 15-20 seconds.
3. Sift in the powdered sugar and beat on medium-high speed for 1 minute until well combined and fluffy.
4. Scrape down the sides of the bowl with a rubber spatula to ensure all ingredients are fully incorporated.
5. Add the flour and cocoa mixture to the bowl and beat on low-medium speed for 30 seconds until a crumbly dough forms and all ingredients are evenly mixed.
