Easy Boston Cream Pie Cookie Bites


Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
Slice the sugar cookie dough into 1/4 inch thick rounds. Press each round into the bottom and up the sides of the mini muffin cups.
Bake the cookie cups in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and let cool completely.
In a mixing bowl, whisk together the instant vanilla pudding mix and cold milk until thickened. Refrigerate until ready to use.
Once the cookie cups have cooled, fill each cup with a spoonful of the prepared vanilla pudding.
In a small microwave-safe bowl, combine the chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
Drizzle the melted chocolate over the filled cookie cups.
Chill the Boston cream pie cookie bites in the refrigerator for at least 30 minutes before serving.
