In a large bowl, sift the wheat flour. If desired, you can add a pinch of salt to slightly enhance the flavor of the pancakes.
Dig a well in the center of the flour and crack the eggs into it. Beat them lightly with a whisk or fork.
Slowly pour the milk into the bowl while continuing to beat the eggs and flour, until you have a smooth, homogeneous batter with no lumps.
Then fold the melted butter into the batter and mix well to get an even texture.
Let the dough rest for about 30 minutes at room temperature. This will allow the dough to relax and develop its aromas.
After resting, heat a non-stick frying pan over medium heat and add a drizzle of oil to lightly grease the surface.
Pour a small ladle of pancake batter into the hot pan and tilt it quickly to distribute the batter over the entire surface. Cook for about 1 to 2 minutes, until the edges of the pancake pull away slightly from the pan.
Using a spatula, flip the pancake over and cook the other side for another 1-2 minutes, until golden brown and slightly crispy.
Repeat the process with the remaining pancake batter, adding a little oil to the pan as needed to prevent the pancakes from sticking.
Serve your pancakes warm with the toppings of your choice: sugar, jam, Nutella, fresh fruit, whipped cream, maple syrup, or whatever you fancy!
