Crockpot Queso Chicken Quesadillas


1. Place the chicken, taco seasoning, and salsa into your slow cooker.
2. Set the slow cooker to low for 4 to 6 hours, allowing the chicken to cook until tender and easily shredded.
3. Once the chicken is cooked, add the queso to the slow cooker and use two forks to shred the chicken into the queso, mixing everything together.
4. To assemble the quesadillas, spread the chicken mixture evenly onto half of each tortilla. Sprinkle shredded cheese over the chicken mixture, then fold the tortilla over to create a half-moon shape.
5. Heat a large skillet or griddle over medium-high heat. Place the assembled quesadillas onto the skillet and cook for about 3 minutes on each side, or until golden brown and crispy.
6. Once the quesadillas are cooked to perfection, remove them from the skillet and cut them into individual pieces.
7. Serve the quesadillas hot, with optional toppings such as sour cream and guacamole on the side for dipping.
