Crock Pot Crack Potato Soup


Pour chicken broth over the potatoes and onion.
Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the potatoes are tender.
Using a potato masher or immersion blender, mash some of the potatoes in the crockpot to thicken the soup to your desired consistency.
Stir in shredded cheddar cheese until melted.
Add cooked bacon, sour cream, and chopped green onions. Stir well.
Season with salt and black pepper to taste.
Cover and cook for an additional 15-30 minutes on low heat until heated through.
Serve hot, garnished with additional shredded cheese, bacon, and green onions if desired.
