Creamy Vegetable Pasta


Instructions:
1. Mix all the sauce ingredients in a large measuring cup and set aside. Get all your other ingredients ready before you start cooking.
2. Start boiling a large pot of water for the pasta. Once it boils, add ½ tablespoon of salt.
3. Heat olive oil in a large skillet over medium-high heat. Add broccoli, onions, carrots, and bell peppers. Cook for about 3 minutes.
4. Add zucchini, peas, and tomatoes. Season with salt and pepper, then cook for another 2-3 minutes. Remove from heat and set aside.
5. In the same skillet, melt butter and add garlic over medium heat. Stir in flour continuously for 2 minutes.
6. Gradually pour in the sauce mixture from step 1, stirring continuously. Let it come to a boil, then reduce to a simmer.
7. Partially cover the skillet while you cook the pasta until it’s al dente according to the package instructions. Once done, drain the pasta.
8. Lower the heat of the sauce to low and slowly add parmesan cheese, stirring until combined. Then, stir in lemon juice.
9. Add the drained pasta to the sauce and mix well. Put the vegetables back in and toss to combine and heat through.
10. Take it off the heat and serve with freshly cracked pepper and slices of fresh lemon.
