Creamy Strawberry Cheesecake Bars


Preheat oven to 350°F (175°C).
In a mixing bowl, combine flour, salt, and sugar. In a separate measuring cup, whisk together oil and milk. Add to dry ingredients, stirring until just mixed.
Form dough into a ball and chill for 10-15 minutes.
Roll dough between wax paper to an 8×8 inch square and fit into a baking pan.
Bake for 8-10 minutes. Cool and then chill.
For the Cream Filling:

Whip cream cheese and powdered sugar until smooth. In a separate bowl, whip heavy cream and vanilla to stiff peaks.
Fold half of the whipped cream into the cream cheese mixture, then the remainder until well mixed.
Spread over the cooled crust.
For the Strawberries:

Puree 1 1/2 cups of strawberries and strain. In a saucepan, mix sugar, Ultra Gel, lemon zest, lemon juice, water, and strawberry puree.
Cook until thickened, then cool. Fold in remaining strawberries.
Spread strawberry mixture over the cream layer. Chill before serving.
