Creamy Lemon Squares

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch baking dish with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.
  3. Press the crumb mixture evenly into the bottom of the prepared baking dish to form the crust. Use the back of a spoon or your fingers to press it down firmly.
  4. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool slightly while you prepare the filling.
  5. In a large bowl, whisk together the eggs and 1 1/4 cups granulated sugar until well combined.
  6. Add the lemon juice and lemon zest to the egg mixture, and whisk until smooth.
  7. In a separate small bowl, sift together the flour and baking powder. Gradually add the flour mixture to the lemon mixture, whisking until smooth and well combined.
  8. Pour the filling over the cooled crust in the baking dish, spreading it out evenly.
  9. Return the baking dish to the oven and bake for 25-30 minutes, or until the filling is set and the edges are slightly golden brown.
  10. Remove from the oven and let the lemon squares cool completely in the baking dish on a wire rack.
  11. Once cooled, refrigerate the lemon squares for at least 2 hours, or until chilled and firm.
  12. Once chilled, dust the top of the lemon squares with powdered sugar, if desired.
