Creamy Chicken with Mushrooms Recipe


Season the chicken breasts with salt and pepper to taste.
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts to the skillet and cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms and minced garlic. Cook until the mushrooms are golden brown and the moisture has evaporated, about 5-7 minutes.
Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
Stir in the heavy cream, dried thyme, and paprika. Bring the mixture to a simmer and cook for 3-4 minutes, until the sauce thickens slightly.
Stir in the grated Parmesan cheese until melted and incorporated into the sauce.
Return the cooked chicken breasts to the skillet, nestling them into the creamy mushroom sauce.
Simmer for another 2-3 minutes to heat the chicken through and allow the flavors to meld.
Garnish with chopped fresh parsley before serving, if desired.
