Cloud Bread

  1. Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the eggs: Carefully separate the egg whites from the yolks, making sure no yolks get into the whites. Place the egg whites in a clean, dry mixing bowl and the egg yolks in another bowl.
  3. Whip the egg whites: Using a hand mixer or stand mixer, beat the egg whites on high speed until they form stiff peaks. This will take a few minutes.
  4. Mix in the cream cheese and sweetener: In a separate bowl, mix together the softened cream cheese and honey or sugar until smooth. If using sugar, make sure it’s well dissolved.
  5. Fold in the egg yolks: Gently fold the egg yolks into the cream cheese mixture until fully incorporated.
  6. Combine the mixtures: Carefully fold the whipped egg whites into the cream cheese mixture, being careful not to deflate the egg whites. Mix until there are no white streaks remaining.
  7. Form the bread: Using a spoon, scoop the mixture onto the prepared baking sheet, forming rounds or desired shapes. Make sure to leave space between each portion as they will expand slightly during baking.
  8. Bake: Bake the cloud bread in the preheated oven for 25-30 minutes, or until they are golden brown and firm to the touch.
  9. Cool and serve: Remove the cloud bread from the oven and let them cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely. Serve as desired.

Cloud bread is best enjoyed fresh, but you can store leftovers in an airtight container at room temperature for up to a day or two. Enjoy your light and fluffy cloud bread as a low-carb alternative to traditional bread!
