Chocolate Peanut Butter Pinwheels


In a mixing bowl, combine creamy peanut butter, softened unsalted butter, and vanilla extract. Stir until smooth and well combined.
Gradually add powdered sugar to the peanut butter mixture, mixing until a dough forms.
Roll out the peanut butter dough into a rectangle, about 1/4-inch thick, between two sheets of parchment paper.
In a microwave-safe bowl, melt semi-sweet chocolate chips and vegetable shortening together in 30-second intervals, stirring until smooth.
Spread the melted chocolate mixture evenly over the peanut butter dough.
Starting from one edge, carefully roll up the peanut butter dough into a log, using the parchment paper to assist you.
Place the log in the refrigerator and chill for about 30 minutes, or until firm.
Remove from the refrigerator and slice the chilled log into pinwheels.
