Chocolate Muffins


1. In a large bowl, combine flour, cocoa powder, coffee powder, salt, baking powder, and bicarbonate of soda. Whisk well to combine.

2. In another large bowl, mix together oil and sugar until well combined. Add vanilla essence, then mix in one egg at a time. Finally, add yogurt and mix until smooth.

3. Sift the dry ingredients into the wet mixture. Gently fold until all ingredients are just combined. Be careful not to overmix.

4. Scoop the batter into a prepared muffin tray, filling each cavity fully. Optionally, sprinkle chocolate chips or chocolate chunks on top.

5. Bake in a preheated oven at 180 degrees Celsius for 18-20 minutes.

Tips:
– For extra puffiness on top, bake at 200 degrees Celsius for 5 minutes, then reduce the temperature to 180 degrees Celsius and continue baking for 15 minutes. Avoid opening the oven during this process.
– Allow the muffins to cool slightly before transferring them to an airtight container to keep them moist for longer.
