Cheesy Onion Crisp


Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.
In a large bowl, combine the flour, salt, and pepper. In another bowl, whisk together the eggs and milk.
Dip the onion slices first in the flour mixture, then in the egg mixture, and finally coat them with the combined breadcrumbs, shredded cheddar cheese, and grated Parmesan cheese.
Arrange the coated onion slices on the prepared baking sheet in a single layer. Drizzle with a little more olive oil.
Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
Remove from the oven and sprinkle with chopped fresh parsley before serving.
Serve the Cheesy Onion Crisp hot as an appetizer or side dish.
