Cheesy Fiesta Potatoes Recipe

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
In a large mixing bowl, toss the diced potatoes with olive oil, chili powder, paprika, garlic powder, salt, and pepper until evenly coated.
Spread the seasoned potatoes in a single layer on the prepared baking sheet.
Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, flipping halfway through for even cooking.
Once the potatoes are cooked, remove them from the oven and sprinkle shredded cheddar cheese evenly over the top.
Return the baking sheet to the oven and bake for an additional 2-3 minutes, or until the cheese is melted and bubbly.
While the potatoes are still hot, sprinkle diced bell peppers, diced onions, and sliced black olives (if using) over the melted cheese.
Garnish the cheesy fiesta potatoes with chopped green onions.
Serve the potatoes hot as a delicious side dish or snack.
Optionally, serve with sour cream and salsa on the side for dipping.
Enjoy these cheesy fiesta potatoes bursting with flavor!
