Cheese Shrimp Penne Pasta & Spinach


Cook the Shrimp:
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
Season the shrimp with salt and pepper. Add the shrimp to the skillet and cook until they are pink and opaque, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
Make the Sauce:
In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and cook until fragrant, about 1 minute.
Pour in the heavy cream and chicken broth. Bring to a simmer and let cook for a few minutes until the sauce begins to thicken.
Stir in the grated Parmesan cheese until melted and smooth.
Combine Ingredients:
Add the cooked penne pasta and fresh spinach to the sauce. Stir until the spinach begins to wilt.
Return the cooked shrimp to the skillet. Toss everything together until well coated with the sauce and heated through. If the sauce is too thick, add a little more chicken broth or cream to reach the desired consistency.
Season with red pepper flakes if using, and adjust salt and black pepper to taste.
Serve:
Serve the pasta hot, garnished with extra grated Parmesan cheese.
