Caramel Cheesecake with Toffee Crunch


Preheat oven to 325°F (163°C).
Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into the bottom of a 9-inch springform pan. Set aside.
Make the Cheesecake Filling:
Beat cream cheese with 1 cup sugar and vanilla extract until smooth.
Add eggs one at a time, beating until just blended. Pour over crust.
Bake for 55 minutes, or until set. Remove from oven and cool to room temperature.
Prepare the Toffee Topping:
Combine brown sugar, butter, and heavy cream in a small saucepan over medium heat. Stir until sugar dissolves and mixture is smooth.
Pour over cooled cheesecake and sprinkle with toffee bits.
Chill for at least 4 hours before serving.
