Buttery Crumble Blueberry Cheesecake Bars


Prepare the Crust: Preheat oven to 350°F (175°C). Combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Reserve 3/4 cup for topping. Press the rest into a lined 9-inch square pan. Bake for 15 minutes.
Make the Blueberry Compote: In a saucepan, combine blueberries, sugar, water, and lemon juice. Bring to a simmer. Stir in cornstarch mixture. Cook until thickened. Cool slightly.
Cream Cheese Layer: Beat cream cheese and sugar until smooth. Add eggs and vanilla, beat until combined
Assemble the Bars: After baking the crust, spread the blueberry compote evenly over the hot crust.
Cream Cheese Layer: Carefully pour the cream cheese mixture over the blueberry compote layer, taking care to not mix the layers.
Topping: Gently sprinkle the reserved crumble topping over the cream cheese layer.
Bake: Return to the oven and bake for the specified time, or until the cream cheese layer is set and the crumble is golden brown. Garnish with fresh blueberries.
