Broccoli Cheese Patties


Prep the Broccoli: Start by draining the defrosted broccoli thoroughly. Chop it into small pieces, or for a finer texture, pulse it a few times in a food processor. The key is to remove as much moisture as possible to prevent the patties from becoming too soggy.
Sauté the Aromatics: Melt the butter in a skillet over medium heat. Add the minced garlic and chopped onion, sautéing until they are soft and fragrant. This will add a depth of flavor to the patties.
Mix the Patty Ingredients: In a large bowl, combine the chopped broccoli, sautéed garlic and onion, breadcrumbs, shredded cheddar cheese, grated Parmesan cheese, and eggs. Season with salt and pepper to taste. Mix everything well until the mixture is homogenous.
Form the Patties: With clean hands, shape the mixture into patties. If the mixture is too sticky, you can oil your hands slightly or add a bit more breadcrumbs to the mix.
Cook the Patties: Heat a thin layer of vegetable oil in a skillet over medium heat. Once hot, add the patties, cooking them in batches to avoid overcrowding the pan. Fry each patty for about 3-4 minutes on each side or until they are golden brown and crispy.
Drain and Serve: Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil. Serve hot, with your favorite dipping sauce or as a side dish.
